Tri-ply technology: the science behind the flavour
The Maestro 3-Ply series works with a three-layer construction: an aluminium core enclosed by two layers of stainless steel. That sounds technical, but the effect is immediately noticeable. Aluminium conducts heat exceptionally well - much better than steel alone - and spreads that heat across the entire bottom and sides of the pan. This way, your risotto won't burn in the spot directly above the flame, while the edges remain barely warm. The whole pan works together.
The stainless steel surface inside is intentionally left uncoated. This is not a cost-cutting measure - it’s a choice. An uncoated stainless steel surface gets hot enough for real caramelisation: that golden crust on your onion, the depth in your stock, the binding in your sauce. You can't achieve that with a non-stick coating. And because there is no coating, there are also no PFAS or other substances to worry about.
The conical shape: more than a design choice
