Creamy Butter Chicken

Butter chicken is one of those dishes that makes everyone happy. The combination of toasted spices, tomato and cream creates a sauce you'd want to eat with a spoon. Use a good Frying pan 32 cm so you can sear the chicken nicely and give the sauce enough room to simmer. This recipe makes a generous portion, because butter chicken only gets better the next day.

Equipment

  • Frying pan 32 cm
  • Cutting board
  • Sharp knife
  • Mixing bowl
  • Grater
  • Wooden spoon or spatula

Ingredients

  • 750 g chicken breast, cut into cubes
  • 150 g plain full-fat yogurt
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 2 tsp smoked paprika
  • 1 tsp ground ginger
  • 3 cloves garlic, finely chopped (for the marinade)
  • Salt to taste
  • 2 tbsp sunflower oil
  • 40 g butter
  • 1 large onion, finely chopped
  • 3 cloves garlic, finely chopped (for the sauce)
  • 2 cm fresh ginger, grated
  • 2 tbsp tomato paste
  • 400 ml passata
  • 150 ml heavy cream
  • Fresh coriander, for garnish
  • Optional pinch of sugar

How to make a creamy butter chicken?

    1. Combine the chicken pieces with the yogurt, garam masala, ground cumin, turmeric, paprika powder, ground ginger, garlic and a generous pinch of salt. Let this marinate for at least 30 minutes in the fridge, or overnight if you have the time.
    2. Heat a splash of sunflower oil in the frying pan over medium heat. Cook the marinated chicken in batches until golden brown all over. Remove the chicken from the pan and set aside.
    3. Melt the butter in the same pan. Sauté the chopped onion over low heat until soft and translucent, about 8 minutes. Add the chopped garlic and grated ginger and cook for another 2 minutes.
    4. Add the tomato paste and fry for 2 minutes. Then pour in the passata and stir everything well. Let the sauce simmer gently for 10 minutes so the flavors meld.
    5. Stir the heavy cream and, if you like, an extra tablespoon of butter into the sauce. Return the seared chicken to the pan and let everything simmer together for another 10 minutes on low heat until the chicken is cooked through and the sauce has thickened.
    6. Taste the sauce and season with salt and, if the sauce is too acidic, an optional pinch of sugar. Garnish with fresh coriander and serve with basmati rice or naan.

A large frying pan is essential for this recipe. You want to sear the chicken on high heat without the pieces touching, otherwise you won't get that beautiful golden crust where the flavor starts. A pan with a thick base distributes heat evenly, so your sauce can simmer gently without burning.

Make a large batch and store the rest in a sealed container in the fridge. The next day the butter chicken tastes even richer and fuller, as the spices continue to develop. Serve with freshly baked naan or fluffy basmati rice for a complete meal everyone will enjoy.
