On a press trip to Austria I met Lianne. The connection was instant: we both love healthy food and we both have our own allergies and intolerances. Plenty of food for conversation then :). That's why I found this recipe for gluten-free kaiserschmarren without sugar very fitting.

Gluten-free Kaiserschmarren

A typical Austrian treat, but without sugar or gluten—and vegan. These pancakes with fruit are perfect to pick at on a Sunday morning.

Ingredients

  • 75 grams rice flour
  • 75 grams almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • pinch of salt
  • 125 ml almond milk (or rice milk, whichever you prefer)
  • 100 ml spa rood (really — the carbonation gives the pancakes lightness)
  • 1 apple, diced (or more apples to taste)
  • garnish to taste: for example raisins, nuts or some frozen fruit
  • for frying: coconut oil
  • optional honey for over the pancakes (or sweeten with maple syrup)

Gluten-free Kaiserschmarren recipe

    1. Mix the dry ingredients in a mixing bowl (rice flour, almond flour, baking powder, cinnamon and salt)
    2. Add the milk and spa rood and stir well until you have a smooth batter.
    3. Heat the coconut oil in the frying pan and fry pancakes from the batter. When the pancakes are lightly browned on both sides, set them aside on a plate for a moment.
    4. Fry the apple pieces in the pan (sprinkle them beforehand with some honey and cinnamon)
    5. Tear or cut the pancakes into pieces and add them to the apples after 3 minutes
    6. Cook everything until it has a nice brown color.
    7. Serve on flat plates. Enjoy!

This gluten-free Kaiserschmarren is a delicious alternative to the classic Austrian dish. Thanks to the rice flour and almond flour you get a light and flavorful result, without gluten. Perfect as breakfast, brunch or a sweet snack for the whole family.

Feel free to vary the garnish to your liking. Raisins, nuts or some frozen fruit make this dish different each time. A drizzle of honey or maple syrup finishes it off. Serve immediately after frying for the best result.
