Suitable for any hob, in the oven and on the barbecue — this pan can be used anywhere
Much lighter than cast iron, so easy to lift when full
After braising, you can simply put it in the dishwasher
Casseroles that simmer for hours, juicy meat that falls off the bone, a soup that fills the kitchen with aroma - these are the dishes that bring joy. The Emile Henry Ceramic Casserole Sublime+ Craie is the pan that makes this possible every time. Not heavier than necessary, not more complicated than it needs to be - just a well-designed casserole that works on any hob, can go in the oven, and goes straight into the dishwasher after the meal.
Casseroles have a reputation: incredibly good for slow cooking, but also incredibly heavy. Emile Henry has rewritten that equation. The Sublime+ is significantly lighter than traditional earthenware or cast iron, while maintaining the same heat distribution and that typical gentle, even cooking technique. Filled with a rich boeuf bourguignon, you can still lift it comfortably. That’s smart design.
What distinguishes a good casserole from an ordinary pot is heat distribution. The Sublime+ heats up quickly and evenly, so there are no hotspots that overcook your dish in one area and leave it raw in another. This makes searing easier and slow cooking more consistent. Start by searing stewing meat on high heat, then turn it down to low? The pan follows your cooking technique instead of you having to follow the pan.
The ceramic glaze inside is acid-resistant and natural - meaning a splash of wine or a tomato ragù won’t cause any damage. You can use metal kitchen utensils without worry. No careful tapping with a wooden spoon for fear of scratches. Just cook, as it should be.
Inside the lid are small bumps. Sounds simple, but the effect is noticeable: steam condenses against the lid and drips evenly back over the dish via those bumps. Meat stays juicy, flavours concentrate, and you need to add less moisture in between. It’s exactly that kind of thoughtful detail that you only truly appreciate when you compare a three-hour stew side by side - with and without.
The result is a dish that tastes as if you’ve spent all day on it, even if you’ve mostly left it alone. That’s slow cooking at its best: intervening when necessary, trusting when it’s not.
Emile Henry has been producing ceramics in Marcigny, in the heart of Burgundy, for generations. The Flame Ceramic technology is the result of decades of development: ceramics that can withstand thermal shocks, can sit directly on induction, and still retain heat like only ceramics can. The Sublime+ is handmade and comes with a 5-year guarantee. This is a pan you buy and then don’t think about again - except to consider what you’ll make in it this week.
The colour Craie - a soft, timeless off-white - means you can confidently place the pan on the table. Round, soft shapes, a neat finish: it’s a pan that doesn’t want to be hidden away in a drawer.
💡 Cookinglife Tip: Start your stew by searing the meat first on high heat in the Sublime+ itself, directly on induction. Then add your vegetables, stock, and herbs, put the lid on, and slide the pan into an oven at 160 °C. Let it cook gently for 2 to 3 hours without checking on it. The self-basting lid does its job in the meantime - you just need to sit down at the table on time.
The Emile Henry Sublime+ is the pan for anyone who takes cooking seriously but doesn’t want to compromise on ease of use. Lighter than cast iron, more versatile than you expect, and beautiful enough to place directly on the table - this is slow cooking as it should be. Add it to your kitchen and taste the difference in your next stew.
