Can I put the mills in the dishwasher?

No — wash the pepper and salt mills by hand. The housing is made of acrylic, and that material doesn't fare well with the heat and harsh detergents in a dishwasher. A quick wipe with a damp cloth is all you need to keep them looking good. The grinding mechanism of stainless steel and ceramic is robust, but it will also last longer without dishwasher cycles.

How do I refill the mills?

You refill them from the bottom of the mill. Unscrew the base, fill the mill with pepper or coarse salt, and screw it closed again. Thanks to the transparent acrylic housing you can see right away when it's time to refill — without having to guess or open the mill.

What kind of salt and pepper should I use in these mills?

Use whole grains or coarse pieces: whole peppercorns for the pepper mill and coarse (sea) salt for the salt mill. Fine table salt or ground pepper are not suitable — they clog the ceramic grinder. The ceramic grinding mechanism is designed to grind hard grains to precisely the size you want.

How do I adjust the grind size?

You adjust the grind size with the knob or nut at the top of the mill. Tighten it for a finer grind, or loosen it for coarser pieces. That way one set gives you control over the texture of both your pepper and your salt, matched to the dish you're serving.

How do I keep the grinding mechanism working properly?

The ceramic grinding mechanism of the Rocca-set requires little maintenance. What you should do: make sure no moisture gets into the mill, because that can make salt clump and block the grinder. Also, don't run the mills completely empty — that wears the ceramic unnecessarily. If you won't be using the mills for a while, store them in a dry place.
