Veg Nacho Casserole

We have less and less meat on the table here at home. I cook on weeknights, which means I also decide what's on the menu. Lately we actually eat vegetarian 4 to 5 nights a week and it's working out really well. This vegetarian—and delicious—oven-baked nacho casserole is on the menu here as comfort food. Not super healthy, but with more vegetables than your average snack meal. Yum!

Recipe

Veg Nacho Casserole

The vegetarian nacho casserole is a delicious comfort food, with layers of nacho chips, vegetarian chicken pieces, bell pepper and melted cheese. The filling is seasoned with onion, garlic, paprika powder and cayenne pepper, then baked in the oven until the cheese is golden. Served with diced avocado and a fresh iceberg lettuce salad, this Mexican dish is perfect for a cozy meal.

Equipment

  • Oven dish

Ingredients

  • 250 g vegetarian chicken pieces
  • 200 g plain nacho chips
  • 1 bell pepper
  • 1 avocado
  • 1 onion
  • 1 garlic clove
  • salt and pepper to taste
  • paprika powder to taste
  • 100 g grated cheese
  • 200 g iceberg lettuce

How do you make a veg nacho casserole?

    1. Dice the bell pepper and finely chop the onion. Put some oil in a frying pan and add the onion, then press the garlic with a garlic press. Sauté briefly.
    2. Now add the vegetarian chicken pieces and fry for about 6–8 minutes until golden brown. Add the bell pepper pieces and cook for a few more minutes. Season with salt, (cayenne) pepper and paprika powder.
    3. Preheat the oven to 180°C. Cover the bottom of an oven dish with a layer of nacho chips. Sprinkle a handful of grated cheese over them. Then spread the vegetarian filling over the cheese. Top with more nacho chips and the remaining cheese.
    4. Bake for about 20 minutes in the oven at 180°C, until the cheese has melted.
    5. Meanwhile, dice the avocado. Serve the casserole with a generous pile of iceberg lettuce and avocado on the side. Enjoy!
