Banana muffins without added sugars

As a colleague of mine put it so nicely, with a little imagination and a good cookbook you can always bake the most delicious things. Inspired by her banana muffin recipe, I set out to create my own version and tadaaaa: gluten-free banana muffins without refined sugar. Perfect for on the go, after a workout or just at home.

Banana muffins recipe

    1. Preheat the oven to 200°C
    2. Place the following dry ingredients in a large bowl: almond flour, buckwheat flour, cinnamon, baking powder and baking soda.
    3. Mash the bananas.
    4. Melt the coconut oil and stir in the egg and the coconut blossom sugar.
    5. Pour this mixture into the flour and add the mashed bananas. Mix everything well and add the vanilla extract.
    6. Spoon the mixture into muffin cases using a spoon and bake the muffins in the oven for 15-20 minutes until nicely golden brown.
    7. Serve on small gebaksbordjes or take them to work, bring them on a day out, or on a sporty bike ride.

These banana muffins are a lovely treat for anyone who wants to enjoy something sweet without added sugars. The ripe bananas provide natural sweetness, while the almond and buckwheat flours give a hearty and nutritious base. Perfect for breakfast, a snack or a healthy treat on the go.

Use measuring spoons to accurately measure the ingredients so your muffins turn out perfect every time. Store any leftover muffins in an airtight container and enjoy them the next day as well. They're also great to freeze for later.
