Equipment

  • Casserole pan
  • Lid
  • Vegetable peeler
  • Stovetop

  • 400 ml red wine
  • 75 g sugar
  • 2 cinnamon sticks
  • 1 star anise
  • 3 cloves

Stewed Pears

    1. Peel the pears. I leave the stems on because it looks pretty when serving. You can also cut the pears into quarters and remove the core (and the stem).
    2. Put the red wine, sugar, cinnamon sticks, star anise and cloves into a large casserole pan. Place the pears in the pan and make sure the pears are just covered. Top up with water if needed—how much depends on your pan.
    3. Bring everything to a boil, then simmer gently on low heat for about 2 hours with the lid on.
    4. You can optionally reduce the sauce now so you can drizzle it over the pears when serving. Remove the pears from the pan and set them aside. Reducing the sauce takes about 15 minutes, depending on how thick you want it. Enjoy!

Stewed pears are a classic Dutch dish that fits perfectly with autumn and winter. The combination of red wine, cinnamon, star anise and cloves gives the pears a deep, warm flavor. They're wonderful as a side to game dishes or as a dessert with a scoop of vanilla ice cream.

Stewed pears are easy to prepare in advance and taste even better the next day. Store them in the fridge in the sauce and gently reheat before serving. That way you always have a festive dish on hand.
