One of my favorite dishes to make and eat has to be pasta. I really see it as a comfort food; after a tough or long day, making a tasty pasta for myself can really lift my spirits! I saw this spaghetti with spinach recipe in a magazine recently and couldn't wait to put my own spin on it! The creamy spinach and zucchini sauce is delicious, and makes this dish an original alternative to the classic bolognese sauce.

Spaghetti with Spinach and Zucchini Sauce

Spaghetti with spinach and zucchini sauce is a creamy and flavorful Italian dish, perfect for a quick meal. The sauce is made from stir-fried zucchini, spinach and onion, blended with broth and cooking cream, and seasoned with Italian herbs. Add vegetarian mince and cherry tomatoes for extra bite, and serve the sauce over spaghetti with grated cheese for a delicious and versatile dinner.

Ingredients

  • 1 splash of olive oil
  • 1 zucchini
  • 1 onion
  • 400 g spaghetti
  • 200 g fresh washed spinach
  • 300 g minced meat or vegetarian mince
  • 1 vegetable stock cube
  • 1 punnet of cherry tomatoes
  • 250 ml water
  • 100 ml cooking cream
  • 100 g grated cheese, to taste
  • Italian herbs, to taste
  • Salt and pepper, to taste

How to make spaghetti with spinach and zucchini sauce?

    1. Finely chop the onion and cut the zucchini into small cubes. Stir-fry together for about 5 minutes in a large sauté pan or wokpan. Then add the fresh spinach little by little and cook until wilted. Add 250 ml water and the vegetable stock cube and stir well. Let this simmer together for about 10 minutes over low heat.
    2. Meanwhile, cook the spaghetti (or pasta of your choice) according to the package instructions.
    3. In a separate koekenpan cook the (vegetarian) mince until browned and crumbly.
    4. After 10 minutes, remove the sauté pan or wok from the heat and purée the vegetables with a staafmixer until you have a creamy sauce.
    5. Return the pan with the sauce to the heat and add the cooking cream. Stir well. Add Italian herbs, salt and pepper to taste. Then stir in the mince.
    6. Finally, cut the cherry tomatoes in halves or quarters and gently fold them into the sauce.
    7. Spoon the spaghetti onto deep plates, pastaborden or deep bowls using a spaghetti server or a regular serving spoon.
    8. Serve the spinach and zucchini sauce over the pasta and finish with grated cheese to taste. Enjoy your meal and feel free to share our recipe with other pasta lovers!
