Grandma's gluten-free and sugar-free cake

I previously posted an entry in which I baked astrawberry-raspberry cakefrom my great-grandmother's antique cookbook. This gluten- and sugar-free Grandma's cake is also based on a recipe from that book, although back then people didn't really think about gluten-free baking or coconut oil. I have to admit I'm happy this cake turned out well. Not only does it look nice, it also tastes delicious.

Grandma's Gluten- and Sugar-Free Cake

Grandma's gluten- and sugar-free cake is a timeless, healthy snack made with gluten-free self-raising flour, coconut oil, agave syrup and eggs. The addition of desiccated coconut and lemon zest gives the cake a lovely flavour, while soy milk and vanilla extract ensure a light texture. Perfect served slightly warm, this cake is ideal for special occasions or simply as a treat for the whole family.

  • Medium-sized cake tin (about 26 cm)

Ingredients

  • 200 g (gluten-free) self-raising flour
  • 100 g coconut oil
  • 125 ml agave syrup
  • 2 eggs
  • 80 ml soy milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons desiccated coconut
  • grated zest of half a lemon
  • pinch of salt

How to make Grandma's gluten- and sugar-free cake?

    1. Grease a cake tin and set it aside. Preheat the oven to 150°C.
    2. First melt the coconut oil and pour it into a large mixing bowl. Add the 2 eggs and the agave syrup. Beat briefly with a hand mixer.
    3. In a separate bowl, combine the flour with the lemon zest, desiccated coconut and the salt.
    4. Fold the flour into the egg mixture and, in two additions, add the soy milk and the vanilla extract. Mix with the hand mixer for another 1–2 minutes until smooth.
    5. Pour the batter into the tin and bake the cake for 70 minutes until lightly golden. Keep an eye on it, as baking times can vary between ovens.
    6. Remove the cake from the oven and let it stand for a while to firm up. Then remove the cake from the tin and let it cool on a wire rack. Enjoy!

This gluten- and sugar-free cake is a lovely alternative to Grandma's classic cake. Thanks to the coconut oil, agave syrup and a touch of lemon, you get a soft, flavourful cake that everyone can enjoy, including people with gluten intolerance or those avoiding sugar.

Serve the cake at room temperature, optionally with some fresh fruit or a spoonful of coconut yogurt. The cake keeps well in an airtight container and tastes just as good the next day. Enjoy!
