I generally try to keep recipes as simple as possible. I'm probably not the only one who gets a bit dizzy from an endless ingredient list, right? Of course I do use ingredients that you can't always find in a regular supermarket, so you'll need to discover a health food shop. Once you have some basic staples at home, you can make most of my recipes in no time.

How to make oat cookies without refined sugars?
Preheat the oven to 170°C
If you have a food processor, pulse the oats until slightly ground. If not, place the oats in a bowl. Add the baking soda, coconut blossom sugar and a pinch of salt.
Melt the coconut oil in a small saucepan. Add it to the oats along with the yogurt.
Mix well. It's very sticky dough, so your hands will get messy. Shape the dough into large, flat cookies about 10 cm in diameter.
Bake for 20-30 minutes until nicely browned. Let them cool — they only become really crisp once cooled.

As I said, it's really a simple recipe — perhaps the simplest cookies I've made so far. You'll need gluten-free oats or gluten-free oat flakes. If you don't have a gluten allergy you can just buy regular oats from the supermarket. The oat cookies are deliciously crisp and will keep for a few days if stored in an airtight tin. Don't store them too long, though, because there's yogurt in them and that doesn't stay fresh for very long.
These oat cookies are great as a snack or with a cup of tea. Store them in a well-sealed jar so they stay crisp. They're gluten-free, can be made vegan, and contain no refined sugars.
