All credit for the recipe of this Healthy Green smoothie goes to my boyfriend. For months he has been joining in politely with my wheat-free experiments in the kitchen and dutifully tasting every sugar-free cookie I present to him. Fortunately he likes most of it, and I believe he doesn’t find my new way of eating such a drama. I’m very happy about that.

Wash the pears well and cut them into large pieces. Do the same with the banana.
Then put the banana, pears, romaine lettuce and mint in a blender and add 2–3 glasses of water.
Blend this well for a few minutes until you have a smooth smoothie. Optionally add some ice cubes so your smoothie is nicely cold.
Preferably serve immediately, or cover the glass blender cup tightly with aluminum foil and put it in the fridge. It will keep for one day! Enjoy.

His enthusiasm for healthy eating has grown so much that he now regularly tries new things himself. That’s how the recipe for this Healthy Green Smoothie came about. I love smoothies, but generally I only make them with fruit. I wouldn’t usually make vegetable smoothies myself—I think it’s because of the color. Green. To drink. But of course I couldn’t refuse my boyfriend’s homemade smoothie after everything I’d put him through, and I could see on his face how proud he was of his healthy creation. So I took a sip, and I was pleasantly surprised!
The mint and pear make the smoothies fresh, and the banana adds a touch of sweetness. The lettuce gives it some goodness, because you (fortunately) don’t really taste it. I liked it so much that I even had a second glass, and then it really becomes a meal. Two glasses also work well as breakfast, especially since it’s a smoothie made from water, fruit and vegetables and therefore packed with vitamins. Do give it a try and don’t be put off by the color.
