FAQ

Is this knife dishwasher-safe?
No — wash this knife by hand. This applies to almost all high-quality knives — especially those with a Pakkahout handle and a Damascus steel blade. A dishwasher attacks the wood, can dull the steel and significantly shortens the knife’s lifespan. Rinse the knife under warm water after use, dry it immediately with a soft cloth and store it. This preserves the sharpness and the iconic wavy pattern for as long as possible.
How do I maintain the blade so it stays sharp?
The VG-MAX stainless steel surrounded by 32 layers of Damascus steel is inherently long-lasting in its sharpness — but this knife still needs occasional care. Use a whetstone (waterstone) for sharpening: this is the most suitable method for Japanese knives. Avoid a honing rod, as it is too coarse for the thin Japanese blade. Sharpen the knife at an angle of about 15–16 degrees and always work carefully. Regular touch-ups prevent the blade from becoming truly dull.
Which cutting surface is best to use with this knife?
Always use this knife on a wooden or plastic cutting board. Hard surfaces such as glass, stone, ceramic or stainless steel damage the blade and make it go blunt quickly — which would be a shame for a knife with 32 layers of Damascus steel. A wooden cutting board is the best choice for Japanese knives: the material is gentle on the edge and helps preserve sharpness longer.
Is this knife suitable for left-handed users?
The handle of the Kai Shun Classic Nakiri has an ergonomic D-shape. A D-shaped handle is asymmetrical and is by default optimized for right-handed users. Left-handers can use this knife, but the handle is not specifically designed for left-handed cutting comfort. Kai offers a left-handed variant for some models — it’s wise to inquire about this in advance if you cook left-handed.
What is a nakiri used for — and what is it not suitable for?
A nakiri is a specialized vegetable knife with a wide, straight blade. It’s perfect for: • Finely chopping and slicing vegetables • Cutting even, thin slices (as commonly done in Japanese cuisine) • Chiffonade of herbs or cabbage Do not use this knife for meat with bones, fish with bones, or hard frozen food. The blade is hard but relatively thin — forceful or twisting motions can damage it.
