This product is one of my favorites in the Shun Classic line, because the combination of a VG-MAX core with 32 layers of Damascus steel around it gives you a sharpness you really feel as soon as you pick up the knife. At 13.75 cm this is a compact santoku knife you can use for almost everything: fine herbs, fish, meat, vegetables. The D-shaped Pakkawood handle also feels like it was made for your hand, even when you're cutting for a long time. Japanese craftsmanship at this level doesn't have to be out of reach, and this knife proves that day after day in the kitchen.

Can I clean this santoku knife in the dishwasher?
No — wash the Kai Shun Classic Santokumes by hand. The combination of the Damascus steel blade and the Pakkawood handle requires careful cleaning: rinse the knife immediately after use with warm water and a mild dish soap, and dry it straight away with a soft cloth. This protects both the blade and the handle and preserves the quality over the long term.
How do I sharpen this knife properly?
Because the blade is made of VG-MAX stainless steel with a Japanese sharpening angle, it’s best to use a water-bearing whetstone or a honing steel that’s suitable for Japanese knives. A standard European sharpening steel can damage the fine cutting angle. By sharpening the knife regularly you maintain the exceptional sharpness Kai Shun Classic is known for.
What cutting surface is best for this santoku knife?
Preferably use the knife on a wooden or plastic cutting board. Avoid hard surfaces such as glass, ceramic, stone or steel: these quickly damage the sharp cutting edge.
