FAQ

Can I wash this santoku knife in the dishwasher?
No — wash this knife by hand. Damascus steel and the Pakkahout handle are sensitive to the aggressive detergents and high temperatures in a dishwasher. That combination damages both the blade and the handle and shortens the lifespan of your knife. To care for it properly: • Rinse the knife immediately after use under lukewarm water. • Dry it immediately with a soft cloth. • Store it in a knife block or on a magnetic strip — never loose in a drawer.
How do I keep the blade sharp?
The VG-MAX steel of this knife retains its edge for a long time thanks to its hard steel composition. Still, every knife wears over time. Here's how to keep the edge sharp: • Use a whetstone or sharpening stone suitable for Japanese knives with a fine angle — a coarse European honing steel is less suitable. • Cut on a wooden or plastic cutting board; glass and stone quickly damage the edge. • A ceramic honing or sharpening rod is a good option for interim maintenance. If in doubt, have the knife sharpened by a professional knife sharpener experienced with Japanese steel.
Is this knife suitable for both right- and left-handed users?
The handle has a traditional D-shape, which in the classic Japanese knife tradition is designed for right-handed users. The D-shape fits comfortably in most people's hands, but left-handers may find the asymmetric grip less comfortable. If you're left-handed and unsure, please note this is a standard right-handed model.
What is included with this knife?
With the Kai Shun Classic Santokumes 18 cm you receive the knife itself. A sharpening stone, knife block or protective sheath is not included as standard. If you want to protect the knife during storage, a separate knife holder or magnetic strip is a smart addition.
For which kitchen tasks is this santoku knife best suited?
This is a versatile knife you can use for most everyday cutting tasks. The 18 cm blade provides enough length for larger cutting jobs and the wide blade is handy for scooping ingredients off the cutting board. What it excels at: • Vegetables – chopping, mincing and fine slicing • Fish – filleting and cutting into portions • Meat (boneless) – slicing thin pieces or cutting into cubes For tasks that require cutting through bone or frozen products, choose a different type of knife — the fine steel of this knife is not intended for that.
