Vegetarische pizza

In many Dutch households pizza is eaten at least once a week. And with good reason; pizza is incredibly tasty and you can vary it endlessly. It doesn't have to be a meat-heavy affair with salami and ham. More and more people are choosing to eat vegetarian more often. With this pizza vegetariana you can easily put a pizza on the table topped with plenty of vegetables. And fittingly, this week is the national Week Without Meat, aimed at encouraging people in the Netherlands to go a week without meat and to promote a flexitarian diet. Vegetarian pizza

A pizza doesn't have to be packed with meat. You can also make a delicious vegetarian pizza, like this one!

  • Rolling pin
  • Pizza stone
  • Pizza boards

Ingredients

  • 250 g flour
  • 150 ml water
  • 1 pinch of salt
  • 1 teaspoon olive oil
  • ½ sachet of yeast
  • 1 bell pepper
  • 1 onion
  • 4 artichoke hearts
  • ½ courgette
  • 200 ml tomato sauce
  • 50 g feta cheese
  • 25 g grated cheese

Vegetarian pizza

    1. First mix the yeast with a little lukewarm water (50–75 ml). Mix the flour and salt together in a bowl and add the yeast water. Stir it into the flour.
    2. Now add the rest of the flour with some water and olive oil and knead until you have a dough. Keep kneading until the dough no longer sticks to your hands. Add a bit more flour if it still sticks.
    3. Put the dough back in the bowl and cover with a damp tea towel. Let it rise for about an hour in a warm place (on top of the radiator, for example).
    4. Preheat the oven to 250°C with the pizza stone inside. Divide the dough into 2 portions. Sprinkle some flour over your countertop or work surface and roll the dough with a rolling pin until it's about half a centimetre thick. Now transfer the dough onto a piece of parchment paper.
    5. Cover the base with tomato sauce. Cut the bell pepper and onion into strips and slice the courgette thinly. Also scatter the artichoke hearts and the rest of the vegetables over the pizzas. Finally, garnish with pieces of feta and some grated cheese.
    6. Bake until crisp in about 10 minutes. Then enjoy your veggie pizza!

Pizza vegetariana, pizza vegetale… there are many names for a 'vegetable pizza' and most restaurants or takeaways have one on the menu. And if you're not a fan of ready-made frozen pizzas, this recipe will certainly do the trick. Baking the pizza on a pizza stone in a regular oven gives you a much crispier result. At least as tasty as a restaurant or delivery pizza!
