This vegetarian vegetable lasagna is super easy to prepare and packed with vegetables. By replacing the traditional pasta sheets with slices of eggplant, it's a very slim lasagna. And actually tastier too, because the combination of eggplant and tomato is almost divine ;-)! Little less meat on the table and more vegetables? Then this is a recipe to keep.

How to make vegetarian vegetable lasagna?
Cut the eggplant into thin slices of about 1 centimeter. Grill the eggplant slices; you can do this in the oven, in a Grill pan or in a contact grill.
Chop the onion. Grab a sizable pan (e.g., a wok pan or skillet) and sauté the onion with some olive oil.
Add the veggie mince and fry for about 5-6 minutes.
Then add the spinach in parts, until all the spinach has shrunk. 400 grams seems like a lot, but it's really not that bad!
Then add the passata and simmer briefly on low heat. Now also add salt and pepper and optionally fresh herbs to taste (e.g. basil, thyme and rosemary).
Take a baking dish and cover the bottom with eggplant slices. A layer of veggie filling then goes on top of this. Cover this layer with a handful of olives. Repeat with eggplant slices and another layer of mixture and olives. Repeat again, now without olives. So the top layer is the veggie mince mixture.
Spread the cottage cheese over the baking dish and now bake for 30 minutes at 175 degrees.

I was inspired by a number of 'lean' recipes in which only six ingredients are used. I find that very useful for weekday evenings. Yet in those recipes I often miss just some extra ingredients that make it a bit tastier. That is why this recipe is just as easy, but it has a little extra taste because of the fresh herbs and onion!
Last weekend my parents came to eat. They are not so of the vegetarian. They enjoyed this vega lasagna enormously, so I think that is a nice compliment. So you can also easily serve it to your friend (s) or girlfriend (s) who do not eat vegetarian food so often. Hide packaging and see if they taste whether it is fake minced meat ;-)!
