Steak with herb butter and roasted garlic

A classic steak with homemade herb butter and roasted garlic. Simple, flavorful and ready in a quarter of an hour.

Ingredients

  • 2 steaks (about 200 g each)
  • Salt and freshly ground black pepper
  • 1 tbsp olive oil
  • 3 garlic cloves, crushed
  • 4 sprigs fresh thyme
  • For the herb butter:
  • 100 g unsalted butter, at room temperature
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp chives, finely chopped
  • 1 garlic clove, finely grated
  • 1 tsp lemon juice
  • Salt and pepper to taste

How to make steak with herb butter and roasted garlic?

    1. Make the herb butter: mix the soft butter with the parsley, chives, garlic, lemon juice, salt and pepper. Roll the mixture in plastic wrap into a log and chill for at least 20 minutes.
    2. Take the steaks out of the fridge 30 minutes before cooking so they come to room temperature. Pat them dry with paper towels and season with salt and pepper.
    3. Heat the frying pan over high heat until very hot. Add a splash of olive oil and place the steaks in the pan.
    4. Cook the steaks 2 to 3 minutes per side for medium-rare. During cooking, add the crushed garlic cloves and sprigs of thyme to the pan for extra flavor.
    5. Transfer the steaks to a plate and let them rest for 5 minutes under foil. This is not optional: resting keeps the juices in the meat.
    6. Place a slice of herb butter on each steak and serve immediately. Delicious with crusty baguette or grilled vegetables.

The key to a perfect steak is the pan. A pan without a coating gives you that intense, crispy crust that a non-stick pan can't achieve. High heat, dry meat and no fuss: that's how it works. Choose a pan that distributes heat evenly and can handle high temperatures. You will taste the difference right away.
