Baked Pancake

A delicious recipe for a successful breakfast (in bed). It's the perfect way to eat fruit — the fruit provides the sweetness.

Ingredients

  • 6 eggs, preferably organic
  • 600 ml almond milk
  • 100 grams almond flour
  • 2 tablespoons buckwheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 2 tablespoons coconut oil

Baked Pancake

    1. Preheat the oven to 220°C
    2. Place a baking dish in the oven.
    3. In a bowl, mix all the wet ingredients except the coconut oil (almond milk, eggs, vanilla extract). Then add the baking powder, salt, almond flour and buckwheat flour.
    4. Take the hot baking dish out of the oven, spoon the coconut oil into it and let it melt. Stir the batter well until smooth.
    5. Pour the batter into the baking dish and bake the pancake for about 30 to 40 minutes. Finish the pancake with fresh fruit and some shredded coconut. Also delicious with a tablespoon of coconut cream. Enjoy!

This oven-baked pancake is a delicious gluten-free alternative to the classic pancake. Thanks to the almond flour and almond milk, it's light and full of flavor. Finish it with fresh fruit, shredded coconut or a spoonful of coconut cream for an extra treat.
