Equipment

  • Mengkom
  • Whisk
  • Frying pan
  • Spatula
  • Ladle

Ingredients

  • 100 grams spelt flour (wholegrain)
  • 1 egg
  • 1 ripe banana, mashed
  • 100 ml almond milk (sugar-free)
  • half a teaspoon baking soda
  • 1 teaspoon (cream of tartar) baking powder
  • 1 teaspoon vanilla extract

Sugar-free American pancakes

    1. Put the spelt flour in a mengkom, together with the baking soda and baking powder.
    2. Then mix in the mashed banana, almond milk, vanilla extract and the egg. Mix well with a whisk.
    3. Use a ladle to spoon the pancake batter into a pan (first melt some coconut oil or olive oil in it). After half a minute add a little more batter on top of the pancake so the pancakes become nice and thick.
    4. Let the pancake cook over low heat until bubbles appear.
    5. Flip them with a spatula and cook the other side until golden brown.
    6. Repeat until the batter is used up and stack the pancakes on a plate. Drizzle with agave syrup, honey or fresh fruit.
    7. Serve on ontbijtbordjes. A cup of tea on the side? Enjoy!

These sugar-free American pancakes make a delicious, healthy breakfast. By using the ripe banana as a natural sweetener you don’t need any sugar. They’re quick to make and perfect for starting the weekend.

Serve the pancakes with agave syrup, honey or fresh fruit for an extra tasty touch. Make a big stack and enjoy this nutritious breakfast together at the table. Also lovely as a snack or a sweet lunch.
