Ceramic Sauté Pan

Here you will find sauté pans made of aluminum with a ceramic non-stick coating. They are all PFAS-free, and meat or fish that you sear in them does not stick easily. Of the five loose pans, one has both its own lid and the oven symbol; the other four have one of those two.

These pans focus on what your dish needs after searing: a lid or the oven. For each pan, you can read about these two here, along with the washing instructions and weight, as specified on the product page.

The Beka Sauté Pan Maestro Alu ø 28 cm has the oven symbol, up to around 200 °C, and a matching lid. It is dishwasher safe. Empty, it weighs about 1.38 kilos.

The De Buyer Sauté Pan Ceranoa ø 28 cm and the De Buyer Sauté Pan Ceranoa ø 24 cm also have the oven symbol, up to 200 °C. The 28 cm pan does not have its own lid, nor does the 24 cm one. They are hand wash only, and empty, the 28 cm pan weighs 1.5 kilos and the 24 cm pan weighs 1.22 kilos.

The Sola Sauté Pan Ceramic Deluxe ø 28 cm and the Sola Sauté Pan Stonehenge ø 28 cm both have their own lid, but no oven symbol. They can go in the dishwasher, although the product page recommends hand washing. Empty, the Ceramic Deluxe weighs 2.01 kilos and the Stonehenge weighs 2.12 kilos.

Which ceramic sauté pan can go in the oven, and what about the lid?

Three out of five have the oven symbol: the Beka Maestro Alu and the two Ceranoa's from De Buyer.

The Beka Maestro Alu has its own lid, and the whole pan can go in the oven, up to about 200 °C. This way, a dish can start on the stove under the lid and finish in the oven in the same pan. The product page does not mention an oven temperature for the lid, so it’s best to remove it before the pan goes into the oven.

If your dish goes into the oven without a lid, you can also take one of the Ceranoa's. For the largest Ceranoa, there are lids of 28 cm among the loose pan lids.

The lid of the Sola Ceramic Deluxe, a pan for the stove, also fits a frying pan of 28 cm according to the product page. So with one of the ceramic frying pans of 28 cm next to it, you have one lid for two pans.

Is an aluminum sauté pan always light?

For the Ceranoa from De Buyer, that is true: in 28 cm, it weighs empty 1.5 kilos. The two Sola's of the same size weigh just over 2 kilos, so at least half a kilo more. When full of sauce, you notice that difference in your wrist, especially when lifting the pan by its handle.

Lighter and somewhat smaller is the Ceranoa of 24 cm: empty 1.22 kilos, with a capacity of 3.3 liters.

What can a ceramic layer withstand, and what cannot?

The layer of these pans does not handle metal and too much heat well, and this is also stated on most of their product pages. Therefore, warm the pan gently, and stir with a wooden or silicone spoon or spatula. If you read elsewhere that a ceramic layer is scratch-resistant or can handle high heat, do not assume that for these pans.

If you want to know if the meat is cooked, cut it on a board and not in the pan. According to our pan expert, pieces of the layer come off when cut with a knife.

A ceramic layer does not necessarily last longer than the layer of your previous pan. A sauté pan completely without a layer also belongs to the sauté pans without PFAS.
