Forget tearing slices and saw through beautiful meat: with the Yaxell Hana Meat Knife 15 cm, you cut with surgical precision and Japanese craftsmanship. This is the knife you never want to miss when slicing a beautiful cote de boeuf or dividing a tenderloin into perfect medallions.

The Hana collection from Yaxell combines traditional Japanese forging with a timeless, elegant design. The result? A knife that looks as good on your countertop as it performs on the cutting board. And believe us: it performs excellently.

Why this knife makes a difference

  • Thin, even slices - The 15 cm blade is just long enough to cut meat in a smooth motion without needing to saw multiple times.
  • Less sticking, more control - Thanks to the blade length, meat sticks less to the knife, allowing you to easily release each slice.
  • Sharp tip for delicate work - Removing sinews, trimming fat, cutting membranes: the fine tip makes the knife suitable for precision tasks that other knives can't handle.
  • Comfortable in hand - The dark brown Pakkawood handle feels confident in hand, provides grip, and absorbs shocks while cutting.
  • 58-60 HRC hardness - Top-quality Japanese steel retains its sharpness significantly longer than European steel.

Japanese craftsmanship, felt in every cut

Yaxell is a Japanese knife manufacturer with decades of experience in forging kitchen knives that delight serious chefs. The Hana collection is made of 3 layers of stainless steel, with a hard core of 58-60 HRC surrounded by two protective outer layers. This combination results in a knife that is not only razor-sharp but also withstands the daily demands of a busy kitchen.

Japanese steel is known worldwide for its ability to maintain a thin, long-lasting edge. You notice it immediately: the first time you glide this knife through a ribeye or a rack of lamb, you understand why serious home cooks and professionals love Japanese knives so much. It glides, it cuts, it performs - without wasting effort.

The handle: where comfort meets aesthetics

A good knife starts with a good handle. The dark brown Pakkawood handle of the Hana is not just beautiful - it is also functionally designed. Pakkawood is a compressed wood composite that is moisture-resistant, less slippery, and comfortable in the palm, even when that palm is wet after washing your hands. It feels warm and organic, like a knife that has been yours for years - even if you just unpacked it.

The balance between the blade and the handle is carefully tuned. Not too heavy, not too light: just what you need to cut comfortably for hours without fatigue in your wrist or hand. Whether you are preparing a quick weeknight meal or serving an elaborate weekend dinner for your loved ones - this knife works with you, not against you.

From Sunday steak to festive banquet

The Yaxell Hana Meat Knife feels at home on Sunday with roasted chicken, but also on the big occasions. Think of that successful Christmas rib roast that you carve at the table while everyone watches. Or the pulled pork that you divide into perfect pieces with a few precise cuts. With this knife in your hand, you do it not just casually - you do it with style.

And because the knife is so versatile, it deserves a permanent place in your knife block. From separating a ribeye to finely slicing raw fish for carpaccio: the Hana meat knife is a true all-rounder in the premium segment.

💡 Tip: Always wash this knife by hand and dry it immediately after use. Japanese steel does not like prolonged contact with water or acidic food residues. Sharpening stone or sharpener? Keep the angle at 15-17 degrees for optimal results - that is the Japanese convention, and it really knows better than 20-degree European sharpening methods.

FAQ

Can I wash the Yaxell Hana Vleesmes in the dishwasher?
For high-end Japanese knives like the Yaxell Hana there is one golden rule: wash by hand. The dishwasher is too harsh for both the Japanese steel and the Pakkahouten handle. High temperatures, corrosive detergents and rubbing against other cutlery will dull the edge and can damage the handle. How to care for the knife properly: • Rinse it immediately after use with warm water and a mild dish soap. • Dry it immediately and thoroughly — including the handle. • Store it in a knife block or on a magnetic strip, not loose in a drawer. The Pakkahouten handle tolerates moisture, but prolonged soaking in water is not recommended.
How do I keep the Yaxell Hana Vleesmes as sharp as possible?
The 3-layer Japanese steel with a hardness of 58–60 HRC holds its edge considerably longer than European steel — but this knife also benefits from proper maintenance. • Use a whetstone or Japanese sharpening stone: Japanese knives are ground thinner than European knives and require a matching sharpening technique with a finer stone (at least #1000 grit). • Don't use a standard sharpening steel: a ceramic honing rod or a leather strop is more suitable for this type of steel. • Cut on the right surface: always use a wooden or plastic cutting board. Glass, stone or ceramic will damage the blade instantly. With the right care this knife will last for years and remain sharp.
Is the Yaxell Hana Vleesmes also suitable for cutting poultry or fish, or only for meat?
The Yaxell Hana Vleesmes is designed primarily for meat — think slicing into a côte de boeuf, breaking a beef tenderloin into medallions, or trimming away tendons and silverskin. The 15 cm blade length and fine point also make it well suited for precision tasks. For poultry the knife works well when portioning breasts or slicing. For fish a meat knife is less ideal: for delicate fish fillets you’re better off with a thin, flexible fillet knife. The Hana Vleesmes is more robust in nature and is at its best with meat and game.
What is Pakkawood and why is it a good choice for a knife handle?
Pakkawood (also called Pakkahouten or wood composite) is a material where layers of wood are compressed under high pressure and impregnated with resin. The result is a handle that combines the warmth and appearance of wood with the durability of a synthetic material. Why this works for a kitchen knife handle: • Moisture-resistant: Pakkawood absorbs less moisture than solid wood and therefore is less likely to warp or crack. • Good grip: the handle provides secure hold even with wet hands. • Shock-absorbing: the composite dampens vibrations while cutting. • Aesthetically timeless: the dark brown color looks warm and suits both modern and classic kitchens. The handle of the Yaxell Hana is carefully balanced relative to the blade, so the knife feels comfortable in the hand during extended use.
What exactly does the 3-layer construction of the Yaxell Hana steel mean?
The blade of the Yaxell Hana Vleesmes consists of 3 layers of stainless steel. The core is made of hard Japanese steel with a hardness of 58–60 HRC — this is the part that forms and holds the cutting edge. Softer outer layers surround this hard core on both sides. This construction has two advantages: • Sharp and durable: the hard core allows for a thin, long-lasting edge. • Flexible and strong: the softer outer layers prevent the hard steel from chipping or breaking in daily use. This type of build is a proven technique in Japanese knife making and produces a blade that retains its edge under the demands of an active kitchen.
