If you eat sugar-free and/or wheat-free, you sometimes long for things you can no longer have. A cookie, bread, pasta. My mother misses filled cookies. This recipe is for her, because although they don’t look the same, these sugar-free fig cookies with almond flour still taste a bit like them. My mother even likes these cookies more than the ‘old filled cookie’. Now that’s a compliment.

Fig cookies with almond flour

These fig cookies made with almond flour are a deliciously sweet and healthy snack, filled with figs, lemon juice and vanilla. The almond-flour dough gives a nutty flavour reminiscent of traditional filled cookies, but in a healthier, gluten-free version. Perfect as a snack or a teatime treat!

Ingredients

  • Filling:
  • 5 dried figs, chopped
  • 3 tablespoons lemon juice
  • 2 teaspoons vanilla extract
  • Dough:
  • 110 g almond flour
  • a pinch of salt
  • 30 ml agave syrup
  • 1 teaspoon vanilla extract
  • 10 g coconut oil

How to make fig cookies with almond flour?

    1. Place the figs in a food processor and pulse until they are in small pieces. Then add the lemon juice and vanilla extract and process until you have a smooth paste. Taste and add more lemon or vanilla if desired.
    2. In a large bowl, mix the almond flour with the salt, then add the agave syrup, vanilla extract and coconut oil. Knead the dough until smooth, wrap it in plastic wrap and let it rest in the fridge for about an hour. Meanwhile preheat the oven to 175°C (350°F).
    3. Divide the dough into about 3 equal portions. On a baking sheet lined with parchment paper, roll out one portion at a time into a rectangle about 1–2 cm thick. Spread the fig mixture lengthwise over one half of the dough.
    4. Fold the other half of the dough over the filled side (left over right). Essentially you’re folding the dough in half. Press the seams well all around so no fig filling can escape.
    5. Place the baking sheet in the oven and bake for about 10–15 minutes until the Newtons are nicely golden brown.

These fig cookies are a delicious, natural treat. The almond flour gives a light texture and the fig filling provides a sweet, fruity flavour. Perfect as a healthy snack or with tea.

Store the cookies in an airtight container in a cool, dry place. They will keep well for several days. You can also vary the filling with other dried fruits such as dates or apricots.
