  • Cutting board
  • Chef's knife
  • Mixing bowl
  • Ladle
  • Plate

Ingredients

  • 1.5 liters of water
  • 450 grams soup vegetables
  • 3 yeast-free/gluten-free bouillon cubes
  • 300 grams (organic) ground beef
  • 1 onion
  • 175 grams gluten-free vermicelli
  • 1 tablespoon dried dill
  • 1 large teaspoon dried thyme
  • 1 tablespoon dried oregano
  • pinch of salt and pepper

Vegetable Soup with Meatballs

    1. Mix the ground beef with the dill, thyme, oregano, salt and pepper. Knead well, then shape into small, bite-sized meatballs. Set aside on a plate.
    2. Cut the onion in half, then slice into half-moons.
    3. Bring the water to a boil and dissolve the bouillon cubes in it. Then add the soup vegetables, onion, meatballs and vermicelli. Let simmer gently for about 15 minutes.
    4. Turn off the heat, ladle into bowls and serve. Enjoy your meal!

This vegetable soup with meatballs is a nourishing, warming meal for the whole family. Thanks to the gluten-free vermicelli and bouillon cubes, the recipe is suitable for people with gluten intolerance. Serve the soup with some fresh bread for a complete meal.

Feel free to vary the soup vegetables depending on what’s in season. The meatballs can also be made with ground chicken or lamb. Leftover soup is often even tastier the next day — store covered in the fridge and gently reheat in a pan.
