Vegetable fries with the best sauce ever

Don't let the title of this recipe fool you. Chips are still chips, and sometimes you just need a big greasy bag (with mayo). But when you have a chip cutter, you make fries — even if they're not made from potato. For work I started experimenting at home with one of those chip cutters, and I came up with a tasty sauce to go with it on the spot. Well, those vegetable fries were a hit!! Quick, take some photos and put them on my blog so you can enjoy them too.

A chip cutter is obviously great, but if you don't have one, no worries: you can just cut the vegetables by hand. And that sauce though. Oh my, is it good! If you don't have Tabasco Chipotle at home, you can use regular Tabasco and add some smoked paprika (which you'll need anyway). You'll still get that wonderful smoked flavour.

Equipment

  • Oven at 200°C
  • baking tray with baking paper
  • chip cutter (optional)

Ingredients

  • 1 large carrot
  • 2 sweet potatoes
  • Good olive oil
  • Pepper & salt from the mill
  • 2 tsp. oregano
  • 1 tsp. smoked paprika

Vegetable fries with the best sauce ever

    1. Preheat the oven to 200°C. Wash the carrot and sweet potato and cut them into fries. Spread over a baking tray, drizzle with olive oil, pepper, salt, oregano and paprika and toss well. Bake for 10 minutes, toss and then bake for another 10 minutes. Check if the vegetables are done; if not, leave them in a little longer (it depends on your oven).

    2. Meanwhile, prepare the sauce by mixing the ingredients together. Don't forget to taste — it's absolutely delicious!

    3. Serve the fries and sauce together and enjoy!

These vegetable fries are a wonderful alternative to regular fries. The combination of carrot and sweet potato brings a natural sweetness that pairs perfectly with the herby warmth of oregano and smoked paprika.

Serve this dish as a side or a light meal. The sauce really ties it all together, so don't skip it. Enjoy!
