It feels like summer… and that means it's time for ice cream. Delicious with lots of fresh fruit, without milk or artificial additives and using as little sugar as possible (or with agave syrup). Strawberries are very popular in summer. Let's upgrade them with something that goes really well with strawberries: balsamic vinegar! The kids love this ice cream and don't notice anything 'strange' in it. So don't be afraid it won't appeal to the little ones.

Remove the hulls from the strawberries and cut them into halves or quarters (if they're large). Put half of the strawberries and the sugar/syrup in a saucepan with the water and bring to the boil.
Cook, stirring occasionally, for 5 minutes and then add the vinegar. Continue cooking, stirring occasionally, for about another 5 minutes until the strawberries are soft. Turn off the heat, add the lemon juice and the remaining strawberries. Let everything cool.
Pour everything into a shallow container suitable for the freezer and freeze for at least 3–3.5 hours. If you use an ice cream machine, pour the mixture into the machine and let it churn until it reaches your desired consistency.
Take it out of the freezer and break the ice into large pieces with a fork. Put the pieces in a food processor and blend until smooth. Return to the freezer in a container.
Remove the ice cream from the freezer 10–15 minutes before serving and scoop it into pretty bowls or dessert glasses. Optionally garnish with fresh strawberries and mint leaves. And enjoy…!

Making a tasty and nearly healthy ice cream turns out not to be complicated. You don't need an ice cream machine, though you can use one to make this ice cream. This recipe does explain in detail how to make it without a machine. You only need a strong blender or food processor. And... a freezer (-;
This fresh strawberry sorbet is wonderful as a summer dessert. With just a handful of ingredients you make a light, fruity ice cream that will surprise everyone. Store the ice cream in a well-sealed container in the freezer and take it out 10 to 15 minutes before serving for the perfect consistency.
