Vegan apple tart with nuts and date-caramel sauce

When I shared that delicious vegan crunchy oats recipe a while back, I mentioned the workshop I attended at Yay. Since then, quite a few of you have let me know that Yay Healthstore has closed its doors. Such a shame, because it was a lovely spot where you could eat incredibly good vegan food.

When one door closes, another opens — and that's exactly what's happening here. I told you last time about Aleid, who was the chef at Yay. Well, she's starting a brand new food concept! A plant-based food bar, no less, called Mr. & Mrs. Watson. It won't be long before this vegan hotspot opens its doors in the already wonderful Amsterdam Oost. Don't expect just salads: vegan food is so much more than that. Think pizzas, cheese (yes, really — vegan cheese), waffles and loads of other delicious things. Seeing is believing? Go check out their Instagram.

During the workshop, Aleid taught me how to make a vegan apple tart. A nut-based crust, a filling of apple (of course), and a gorgeous date-caramel sauce on the side. Replace a classic slice of apple pie with this? No, don't — but do make this tart and discover just how ridiculously good it is. Absolutely worth it!

    1. The base

Put all the ingredients in the food processor and pulse until a firm dough forms. Check whether the dough is sticky enough by rolling a small ball: if it holds together without crumbling, you're good. Dust the springform tin with a little cocoa powder to prevent sticking. Press the dough into the tin in an even layer about ½ cm thick, making sure to press up the sides as well.

    2. The filling

Wash the apples and cut them into small cubes. Roughly chop the raisins, then combine all the filling ingredients in a bowl and let the flavours mingle. Meanwhile, prepare:

    3. The caramel sauce

Place all the ingredients in the food processor and blend until completely smooth.

Stir the caramel sauce through the filling, then spoon the filling onto the base. Leave to set in the fridge for 3 hours. Garnish the tart with chopped nuts, desiccated coconut or a little lavender. Enjoy!

This apple tart is completely plant-based and contains no refined sugars. All the sweetness comes naturally from dates and raisins, making this dessert far more nourishing than a classic apple pie. Perfect for anyone who wants to indulge without compromising on flavour.

Garnish the tart however you like — chopped nuts, desiccated coconut or a sprig of lavender all work beautifully. The tart keeps well in the fridge for up to three days, so you can easily make it a day ahead.
