Totally tuna burgers

I love fish and trying new things. When I walked past the fish stall next to Marqt on Utrechtsestraat yesterday, I fancied a nice herring and asked the fishmonger for a tasty fish for dinner. He told me about his tuna burgers. Sounds great! But I expected a ready-made burger. That was not the case at all, because 'a piece of flattened tuna steak between a bun, that is a real burger.' I could only agree with John the fishmonger. With a belly full of herring and a bag filled with tuna, some tasty burger buns and a bit of wakame I went home. John had shown me a photo of 'his' tuna burger, and I decided it was a good idea to make it myself. And it was a good idea, because the burger was really delicious! We ate it with arugula and avocado, olive oil, salt & pepper and mango vinegar (fromSimone’s Kitchen of course) on the side and it tasted perfect.

Equipment

  • Grill pan
  • 2 small bowls
  • chef's knife

Ingredients

  • 2 tuna steaks
  • 2 hamburger buns (the tasty sesame-seeded kind)
  • 2 tbsp mayonnaise
  • 1 tsp wasabi paste
  • 2 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • a handful of wakame
  • salt & pepper

Totally tuna burgers

    1. Heat the grill pan and season the tuna on both sides with salt & pepper. Flatten them slightly with a large, broad knife. Cut the buns in half and briefly grill them cut-side down; the brown grill marks should just be lightly visible.

    2. Stir the mayo and wasabi together in one of the bowls and the soy and balsamic in the other bowl. Put the tuna under the grill for as long as you like. I like it with a seared outside and a raw inside, but of course you can leave it under the grill a little longer.

    3. Spread the bottom half of the bun with a layer of wasabi mayonnaise and place the grilled tuna on top. Now drizzle some of the balsamic-soy mixture over it and add a small clump of wakame. Put the other half on top, and you're done! I think you'll seriously only spend about 10 minutes in the kitchen for this dish, so it's perfect if you don't have much time. Or if you just suddenly fancy something really delicious 😉

This recipe is ideal when you have little time but still want to put something special on the table. The combination of wasabi, soy and balsamic gives the burger a delicious Asian twist you won't soon forget.

How you cook the tuna is entirely up to you. Rare in the middle with a seared exterior is highly recommended, but cooking it a bit longer in the grill pan works fine too. Serve immediately and enjoy!
