Spelt couscous with falafel, pointed pepper and rocket

So I found some leftover falafel in my fridge, had a bit of rocket to use up, plus some hummus and tzatziki. Grab a few tomatoes, raid the herb drawer, and just like that — a flavourful couscous dish is born! Feel free to use regular couscous, or swap the pepper for courgette, for example. Honestly, it's pretty hard to go wrong with this one.

With dishes like this — especially tasty couscous ones — I usually make a little extra so I have lunch sorted for the next day. But then, more often than not, I end up eating out unexpectedly and have to throw it away a few days later. Such a waste, of course. My saving grace has been the Foodsafer I received: a handy vacuum-sealing device. By removing the oxygen from around the food, it stays fresh up to 5 times longer. And unlike a regular storage container, vacuum-sealing preserves both the flavour and nutritional value — which is a real bonus.

    1. Prepare the couscous by placing it in a bowl and adding the right amount of boiling water (follow the instructions on the packet).

    2. Dice the tomatoes and pepper and stir them through the cooked couscous. Mix in the hummus, herbs, olive oil, lemon juice and a little salt and pepper.

    3. Gently warm the falafel balls in a pan over low heat until heated through. Place a handful of rocket on each plate and dress with a drizzle of olive oil.

    4. Spoon the couscous on top and arrange the falafel alongside. Finish by crumbling over some feta. Serve the tzatziki on the side for dipping. Enjoy!

This dish is perfect for a weeknight when you want to get something delicious on the table fast. The combination of spelt couscous, fresh vegetables and spices like ras al hanout and smoked paprika delivers a rich depth of flavour with minimal effort.

Serve the tzatziki on the side so everyone can dip as they like. Use the spicy hummus for an extra kick. Add some fresh bread and the meal is complete.
