These quesadillas with creamy avocado and smoked chicken are quick to make and always hit the spot. Perfect for a weeknight dinner or an easy lunch.

Ingredients

  • 2 large tortilla wraps
  • 1 ripe avocado
  • 150 g smoked chicken breast (ready-to-eat)
  • 80 g grated aged cheese or cheddar
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • 2 tbsp sour cream (for serving)
  • Optional: fresh cilantro or salsa

How to make quick quesadillas with avocado and smoked chicken?

    1. Cut the avocado in half, remove the pit and scoop out the flesh. Roughly mash it with a fork and season with lime juice, salt and pepper.
    2. Shred the smoked chicken into thin strips using two forks.
    3. Place a tortilla on a clean work surface. Spread avocado over half of it, distribute the chicken strips on top and generously sprinkle with grated cheese. Fold the tortilla in half.
    4. Heat a frying pan over medium heat without oil. Place the folded tortilla in the pan and cook 2 to 3 minutes per side, until golden brown and crispy and the cheese has melted.
    5. Remove the quesadilla from the pan and let it rest for 1 minute. Cut into wedges and serve immediately with sour cream and, if you like, a spoonful of salsa or some fresh cilantro.

A good frying pan makes all the difference. Even heat distribution ensures your quesadilla browns evenly without the cheese burning. Cook without oil for a crisp, dry result you’ll be happy with.
