Sardine tartare with tomato carpaccio

I regularly get excited about food post, and the last delivery had something truly special in it. Fish Tales isn't just an online magazine — it's also a product line. With fish, naturally 😉 Have you ever been to Portugal? Then you'll know those beautiful old-school sardine tins with a paper wrapper around them. That's exactly what turned up at my door, and they're just so cool!

The responsibly sourced (sustainably caught) sardines from Fish Tales are wrapped in Dutch artwork that came out of a design competition. How great do they look?! There are three different tins of sardines in lemon, tomato and olive oil flavours.

For this tasty starter, the sardines in olive oil are used. When slicing the tomatoes, make sure you use a good sharp knife — that's the only way to get nice thin slices. If you can't find tomatoes in different colours, regular red ones work just fine =)

Sardine tartare with tomato carpaccio

    1. Mash the sardines with a fork and mix with the capers, sun-dried tomatoes, olives and a few finely chopped basil leaves to form a tartare.

    2. Use a ring mould to shape the sardine tartare in the centre of a large plate.

    3. Arrange the tomato slices around the tartare.

    4. Scatter the goat's cheese and a little basil over the tomatoes.

    5. Drizzle some olive oil over the tomatoes.

    6. Season the dish with white pepper and sea salt to taste.

Try to use tomatoes in a variety of colours for a beautiful, festive-looking plate. Ripe, fragrant tomatoes will really make this dish sing.

A good high-quality olive oil is essential in this recipe. Drizzle it generously over the tomatoes for the best flavour.
