Salad with pearl couscous, halloumi and grapes

Sometimes you stumble on things you don’t know in advance how they’ll turn out, but that end up being great. I had a double discovery, and both worked out wonderfully! We all know couscous, but have you ever heard of pearl couscous? Those are little balls (larger than regular couscous) that you cook and, for example, toss through a salad. Discovery number two for me was halloumi: the grilled cheese is fairly well known by now, but I had never cooked with it before. I thought it might be nice to make a simple salad combining these two discoveries. The great thing about this dish is that it’s super easy and quick to make, very flavorful and doesn’t require many ingredients. If you have it for lunch, it’s enough for 3. As a dinner, it’s perfect for two =)

  • 200 g pearl couscous

Salad with pearl couscous, halloumi and grapes

Cut the halloumi into three slices, place them in a small bowl, pour a few generous glugs of olive oil over them (so they’re slightly submerged) and mix in about a tablespoon of oregano. Let this marinate for about 10 minutes. Meanwhile, cook the pearl couscous for 12 minutes, drain it and season with pepper and salt. Toss the arugula and pearl couscous together in a bowl. Grill the halloumi until both sides are nicely browned. Wash and halve the grapes and serve the pearl couscous/arugula with the halloumi, garnished with the grapes. Enjoy!

Pearl couscous is slightly larger and rounder than regular couscous and has a lovely tender bite. Combine it with salty, grilled halloumi and fresh arugula for a balanced meal.

Add a drizzle of balsamic vinegar for extra depth of flavour. This salad is perfect served as either lunch or a light dinner.
