My favorite spaghetti bolognese

Spaghetti bolognese is a true classic, but it comes in many forms. Some keep it very basic with just tomato and minced meat, while others go all out and add lots of vegetables. The original recipe comes from Bologna in Italy, and the traditional ingredients are ground beef, pancetta, onion, carrot, celery, tomato paste, wine and whole milk. My mother used to make it with vegetables and sugocasa pasta sauce. I always thought there was junk in that sauce, and that it was better to always use canned tomatoes (or passata di pomodoro), but a look at the ingredient list showed me that apart from tomato there are only some spices, so no problem =)

My own recipe is inspired by the classic version and my mom's, but with a little twist. I learned to add a bit of sugar, cinnamon and sambal from my mom's neighbour: she's Greek and this gives her dishes a particularly delicious flavour. I think spaghetti bolognese is real comfort food: a big dish in the middle of the table so everyone can serve themselves as much as they like. With a fresh salad on the side – for example a Caprese – your meal is complete. Enjoy!

This spaghetti bolognese is a real favorite: a rich meat sauce with vegetables, herbs and a touch of cinnamon for extra depth. Perfect for a cozy weeknight meal.

Equipment

  • Large pan or Dutch oven
  • saucepan

Ingredients

  • 300 g spaghetti
  • 350 g ground beef
  • bottle of sugocasa pasta sauce
  • 1 onion
  • 2 cloves of garlic
  • 1 tsp oregano
  • 1 tsp sambal
  • 1 tsp sugar
  • pinch of cinnamon
  • splash of red wine
  • splash of balsamic vinegar
  • 1 carrot
  • 2 stalks of celery
  • a handful of fresh basil, stems attached
  • salt & pepper
  • olive oil or butter

Spaghetti bolognese

    1. Chop the onion, garlic, celery and carrot into small pieces and roughly chop the basil.

    2. Heat some oil or butter in the pan and crumble and brown the ground beef. Scoop the meat out of the pan and set it aside.

    3. Don't clean the pan; add a little more oil and gently sauté the onion. Add the garlic, pepper and salt and let the garlic cook for a moment as well.

    4. Now add the carrot, basil, celery and oregano: stir everything well and let it simmer gently for about 10 minutes. Now add the tomato sauce, sambal, sugar, cinnamon, wine and balsamic vinegar. Add the meat back in as well. Stir everything together and turn the heat down low.

    5. Cook the spaghetti in plenty of water while the sauce gently simmers. As long as you keep the heat low this sauce really can't overcook. I like it best if it has rested for at least half an hour.

    6. Spoon a ladle of sauce over the spaghetti, or serve them separately in bowls as I did. Enjoy your meal!

The sauce really tastes best if you give it time to simmer slowly. Half an hour on low heat makes a world of difference to the flavor.

Serve the spaghetti and sauce separately at the table so everyone can help themselves. Nice with some freshly grated cheese and extra fresh basil on top.
