Most delicious healthy ice pop ever with only 3 ingredients: Coconut yogurt cherry ice

How do you get the ultimate summer feeling on a stick? Make yogurt ice pops! You may have heard me mention Abbot Kinneys; dairy-free yogurt made from 100% coconut. After the first bite I was instantly sold — this is so delicious! Besides tasting great it's also healthy and versatile, and that's exactly what this lovely recipe shows.

Equipment

Ingredients

  • 350 g cherries with pits (approx. 300 g without pits)
  • 400 ml coconut yogurt
  • a handful of coconut flakes

Coconut yogurt cherry ice

    1. Wash the cherries (with stems and pits), and remove the pits by making a small cut around the pit with a small knife, similar to how you would with an avocado. Twist the two halves in opposite directions and pop the pit out with your thumb.

    2. Put the cherries in a small saucepan with a splash of water and set over low heat. Let them simmer until the cherries soften, and mash a few with a fork.

    3. Fill the molds with a layer of coconut yogurt and then a layer of cherries. Use the back of a spoon to poke into the mixture or stir a little to create pretty swirls. Repeat until the molds are full and freeze for at least 4 hours.

    4. Crush some coconut flakes between your fingers and sprinkle over the ice pops when they’re ready. Optionally garnish with extra cherries on top.

These ice pops are best after at least 4 hours in the freezer, but overnight is even better. Take them out a few minutes before serving so they slide easily out of the molds.

Don't have cherries on hand? You can make this recipe with other soft summer fruits like strawberries or raspberries. The coconut flakes on top add a nice crunchy bite as a finishing touch.
