Finely chop the onion, pepper and garlic. Cut the zucchini, eggplant, bell pepper and canned tomatoes into pieces about 1 x 1 cm (the tomatoes can be a bit chunkier).
Heat olive oil in the pan and sauté the onion until it starts to colour. Now add the garlic, pepper, cumin, cayenne pepper and allspice and stir everything through.
Add the ground beef and cook until lightly browned.
Now add the chopped vegetables and stir well so the spices are evenly distributed. Then add the tomato paste, the canned tomatoes with their juice, the chili beans, red wine and all the fresh herbs. Pour in 200 ml of water and add some salt and pepper.
It's almost ready! Let the dish simmer gently for about 30 minutes until the vegetables are soft and the sauce has thickened slightly. Taste and add extra seasonings or Tabasco if desired. Adjust to your own preference, of course.
