Make your own ice cream: Berry cream ice cream

Happiness is something you create yourself, that’s for sure. You can’t force good weather, but you can create a happy, summery feeling. And what better way to create that summer feeling than with delicious, homemade ice cream?!

I’ve already told you about Eat Right, the new book by Nick Barnard. The book is described as “A brilliant book about how to get the most out of food”. Not over the top healthy fuss, but just good food. Now that’s our kind of thing! And good food goes with good ice cream. The book shares a fun fact about ice cream:

Cream-based ice cream and sorbets are not modern luxuries. In the centuries before refrigerators and refrigerated transport, snow and ice were collected in the mountains or during cold winters and stored in icehouses. More than 2,500 years ago the Persians made simple sorbets from snow and fruit juice. The best ice cream recipes still often consist of just a few (seasonal) ingredients, but they need to be top quality.

If you don’t yet own an ice cream maker, definitely consider getting one. Once you’ve tasted homemade ice cream, you won’t want anything else! Such a machine doesn’t have to be expensive: for example, Lidl recently had one for sale.

Most fresh berries bruise easily and also lose a lot of flavour when you wash them. Preferably use organic berries, which are guaranteed not to have been sprayed. Remove any spoiled ones and any little critters. If you’re not a big fan of berries but you do like ice cream, scroll down: you’ll also find how to make strawberry and chocolate ice cream.

  • blender

  • freezer
  • baking paper

Ingredients

  • 500 g fresh or 450 g frozen berries, organic (a mix of sweet and tart berries)
  • 2 egg yolks from free-range eggs
  • 500 ml cream, preferably raw-milk cream, otherwise Guernsey or Jersey cream
  • Maple syrup

Berry cream ice cream

    1. If you’re using frozen berries, let them thaw slightly. Blend them with the egg yolks and cream until smooth. Taste the mixture and add maple syrup little by little until the flavour is just right.

    2. Churn the mixture into ice cream in an ice cream maker. Preferably enjoy it fresh from the machine, as it will have a light whipped-cream texture. Put any leftovers straight into a small freezer container, place a sheet of baking paper on top and freeze. Don’t store it too long and take the ice cream out of the freezer well before serving so it can soften a bit.

This berry cream ice cream is best enjoyed fresh from the ice cream maker. It then has a light, airy texture reminiscent of whipped cream. Store any leftovers well sealed in the freezer and take the ice cream out well before serving so it can soften slightly.

Use a mix of sweet and tart berries for the best balance of flavours. Add the maple syrup step by step and taste as you go, so you can decide how sweet you want the ice cream to be.
