Preheat the oven to 180°C
Finely chop the onion and garlic clove and sauté them in a large pan with a little oil.
Dice the bell peppers.
Add the ground meat, and after about 5 minutes add the diced peppers and the spinach.
Meanwhile, cook the lasagna sheets according to the package instructions.
Stir until the spinach has thawed, then add the tomato sauce, along with pepper and salt and, if you like, a pinch of dried oregano and a pinch of dried basil (2 pinches of each herb). Taste and adjust; a pinch of cinnamon is also very nice.
Take a large ovenschaal and start by ladling a thin layer of the sauce mixture into it. Place 2–3 lasagna sheets on top, then another layer of sauce. Repeat until the sauce is used up, making sure you always finish with a layer of sauce.
Top with the grated goat cheese (or omit if you eat dairy-free) and a few cherry tomatoes. Bake in the oven for 20-25 minutes until golden brown and garnish with some fresh basil. Enjoy!
