Healthy caesar salad with turkey and sugar snaps

By the time this article goes live I'm on my first detox juice, and the recipe you're about to read is my last solid food for the next three days. Call me crazy, but I've always wanted to try a juice detox. Since Juizs' program only lasts 3 days I decided to go for it. I can't quite imagine chewing nothing for a whole week 😉

I actually wanted to start last week, but I realised a little too late that you have to taper off two days before you begin the juices. Alcohol and caffeine are skipped during those days, as well as beef and pork. With two full days of barbecuing it wasn't the best idea to start the detox cold turkey. Over the past days I've managed it though, partly thanks to the inspiration Juizs gave me in their tapering e-book, which contains a number of delicious and healthy recipes. For lunch I chose my own fresh pumpkin soup and in the evening I made the ‘caesar salad new style’ from the e-book.

Although Tigon isn't detoxing, he's joining in too: it's a seriously tasty salad. Because it includes sugar snaps and tomato it's a bit more dressed-up than the classic caesar salad, which makes it a great dinner. Also perfect if you prefer fewer or no carbs =)

Equipment

  • Pan
  • Frying pan
  • Hand blender with chopper

Ingredients

  • 2 turkey fillets
  • romaine lettuce leaves
  • container of sugar snaps
  • 2 hard-boiled eggs, cut into 6 wedges (I use an egg slicer for this)
  • 2 vine tomatoes
  • shavings of fresh Parmesan cheese
  • 1 tablespoon capers
  • salt & pepper
  • 1 tsp Bob’s garden kruiden van Simply Spices (you can also choose your own herbs, for example oregano)

Healthy caesar salad with turkey and sugar snaps

    1. Cut the turkey fillet into strips and stir-fry them in a wok or frying pan until cooked through. Clean the sugar snaps and blanch them in a small pan of boiling water for 2–3 minutes.

    2. Wash and chop the tomatoes and prepare two plates. Divide the lettuce leaves, tomatoes and sugar snaps between the plates. Place the pieces of cooked turkey and the egg wedges on the salad. Use an immersion blender with chopper to make the dressing from the nuts, olive oil, Worcestershire sauce and balsamic vinegar. Garnish the salad with some capers and Parmesan shavings and finish by drizzling the dressing over everything. Enjoy!

This salad is perfect as a light lunch or a healthy dinner. The combination of lean turkey breast with fresh vegetables and Parmesan makes for a flavorful and nutritious plate.

Feel free to vary with your favourite herbs or add extra vegetables to taste. The dressing is easy to make with an immersion blender and chopper for a creamy result.
