Happy bowl with zucchini, salmon and green beans

Healthy things that are also really tasty make me instantly happy. Now, ‘healthy’ is a relative term, but in my view this dish definitely fits. It’s made almost entirely of vegetables and is packed with good fats, fibre and protein. The fats come from the avocado and the salmon, the protein from the salmon (and from the egg, of course), and green beans are legumes that provide the much-needed fibre.

I ate this myself for lunch, but if you fancy a light dinner that works just as well. Whatever you’re in the mood for! Oh, one small tip: I steamed the beans, poached the egg and made ribbons from the zucchini. No problem at all if you don’t have a steamer basket, aren’t great at poaching eggs (just use a little plastic bag, I do the same) or don’t own a spiralizer. In that case cook the beans and the egg, and cut the zucchini into very thin slices.Easy as that!

Equipment

  • Steamer basket
  • Small saucepan
  • Frying pan
  • Spiralizer

Ingredients

  • 75 g green beans
  • 1/2 zucchini
  • Handful of arugula
  • 1/2 avocado
  • 1 egg
  • 3 slices smoked salmon
  • Handful of pine nuts
  • Juice of 1/2 lemon
  • Olive oil
  • Freshly ground salt & pepper

Happy bowl with zucchini, salmon and green beans

    1. Use the spiralizer to make ribbons from the zucchini. Place a handful of arugula in a deep bowl, top with the zucchini ribbons and drizzle with a little olive oil, then season with salt and pepper.

    2. Steam the green beans for about 4 minutes until tender and poach (or boil) the egg. Slice the salmon into strips and cut the avocado into cubes.

    3. Now make three sections on the plate: one with salmon, one with beans and one with avocado. Finally drizzle a little olive oil over everything, squeeze on the lemon juice and season with a bit of salt & pepper. Place the egg on top, and enjoy!

This bowl is a lovely way to eat more vegetables in a fun way. The zucchini ribbons are a light alternative to pasta and pair perfectly with creamy avocado and soft smoked salmon.

Serve the bowl immediately after assembling so the zucchini ribbons stay crisp and the egg is still nice and warm. A squeeze of lemon juice gives a fresh finishing touch.
