Stir-fried steak strips with shiitake and bok choy

Stir-frying might be the most honest way of cooking: high heat, little time and still a plate full of flavor. With a good wok pan it also works surprisingly well at home. The high sides mean you can quickly and easily toss everything together without half of it flying out of the pan. Marinate the steak strips briefly in soy sauce and ginger so they are immediately full of flavor. Add shiitake and bok choy, a splash of oyster sauce, and you have a little culinary moment to enjoy.

  • 350 g steak (cut into thin strips)
  • 200 g shiitake mushrooms
  • 2 heads bok choy
  • 3 cloves garlic (finely chopped)
  • 2 cm fresh ginger (grated)
  • 3 spring onions
  • 3 tbsp soy sauce

  • 1 tsp sesame oil
  • 1 tsp cornstarch

  • 1 tbsp sesame seeds (for garnish)
  • Steamed rice or noodles of your choice

How to make stir-fried steak strips with shiitake and bok choy?

    1. Cut the steak into thin strips about half a centimeter thick. Toss them in a bowl with the soy sauce, sesame oil, grated ginger and cornstarch. Let marinate for 10 minutes.
    2. Halve the shiitake and cut the bok choy into large pieces. Finely chop the garlic and slice the spring onions into rings.
    3. Heat the wok pan over high heat until it's very hot. Add a splash of sunflower oil and fry the steak strips for 2 to 3 minutes until browned on all sides. Scoop them out of the pan and set aside.
    4. If needed, add a little more oil. Fry the garlic for 30 seconds over medium-high heat, then add the shiitake and cook for 3 minutes until they turn golden brown.
    5. Add the bok choy and stir-fry for 2 minutes. The leaves should wilt, but the stalks should still have some bite.
    6. Return the steak strips to the pan. Add the oyster sauce and a splash of water. Stir-fry everything for another minute so the sauce coats everything well.
    7. Divide among plates with steamed rice or noodles. Garnish with spring onions and a few sesame seeds. Serve immediately.

The key to good stir-frying is heat. Make sure your pan is really hot before the meat goes in, because that's how you get that nice brown exterior while keeping it tender inside. Always slice the meat against the grain for the best texture. This recipe also works well with chicken breast or tofu if you want to swap the meat.

A wok pan with high sides and a non-stick surface makes dishes like this much easier. You can cook everything in batches without anything burning or ending up outside the pan. Choose a pan that's built to last and suitable for all heat sources, and you'll always be set. Browse the range and find the wok pan that fits your kitchen.
