Equipment

  • Champagne glasses
  • Measuring cup
  • Pitcher or mixing bowl
  • Stirring spoon
  • Ice cube tray
  • Sieve

Ingredients

  • 200 ml blueberry juice (pure, no sugar)
  • 50 ml fresh lime juice (approx. 2 limes)
  • 2 tbsp elderberry syrup
  • 400 ml cold sparkling water or sparkling grape juice
  • 1 can lychees in syrup (400 g, approx. 12 pieces)
  • 12 fresh blueberries
  • 2 tbsp lychee syrup (from the can)
  • 2 lime slices
  • Ice cubes as needed

How to make the Halloween Blueberry Eyeballs Cocktail?

    1. Make the eyeballs first: drain the lychees and reserve the syrup. Push a fresh blueberry into each lychee. The blueberry represents the pupil; the lychee is the white of the eye. Set the eyeballs aside and chill them in the fridge until ready to use.
    2. In a pitcher, mix 200 ml blueberry juice with 50 ml lime juice and 2 tablespoons elderberry syrup. Stir well. The elderberry syrup gives the drink its deep, almost black-purple color, which amplifies the creepy effect.
    3. Add 2 tablespoons of the reserved lychee syrup to the mixture and stir again. The lychee syrup adds a subtle floral sweetness that balances the lime's acidity.
    4. Fill each champagne glass halfway with ice. Use large ice cubes so the eyeballs don't sink under the ice but remain nicely visible.
    5. Place 2 lychee eyeballs on the ice in each glass. Make sure they sit with the blueberry facing up, so the pupil looks toward the drinker.
    6. Slowly pour the berry mixture over the ice until the glass is two-thirds full. Pouring slowly prevents the eyeballs from flying everywhere.
    7. Top each glass with cold sparkling water or sparkling grape juice. Do this carefully along the rim of the glass so the bubbles keep the drink airy without creating foam.
    8. Garnish with a lime wheel on the rim of the glass and serve immediately. The eyeballs now float in the purple liquid, completing the scary effect. Put them on the table right away for the best result.

Want to make the drink even creepier? Add a few drops of black food coloring to the berry mixture for an almost inky color. One more tip: use silicone ice molds shaped like skulls or bats. They melt more slowly than regular cubes and give your cocktail an extra Halloween twist. Make sure the lychees are well drained, because too much syrup will make the drink too sweet. Keep the eyeballs in the fridge until the very last moment so they stay fresh and firm enough to sit upright in the glass.

Want to serve an adult version? Replace the sparkling water with dry prosecco or cava. The bubbles set the eyeballs in motion, making the effect even spookier. Don't have elderberry syrup on hand? Use raspberry syrup or blackcurrant syrup for a similar deep color. You can replace blueberry juice with blackcurrant juice. This recipe is easy to scale for a larger group by doubling the ingredients and preparing the berry mixture in a large pitcher ahead of time. Fill the glasses only at the last moment so the bubbles are at their best.
