Gingerbread waffles with maple syrup butter

You finally have time to sit down and enjoy a leisurely breakfast. On other days I'm always flat out with dinner, squeezing in some blog work or editing photos. But on Christmas and New Year's Day all of that falls away, and there's room to sit together over breakfast, open presents, and simply enjoy each other's company.

So on a day like this, it can be a little more special than just a slice of toast or a bread roll with chocolate spread or cheese. A lovely croissant, some freshly squeezed orange juice, an egg with a little smoked salmon — and of course something sweet to go alongside. And as I said, on a holiday it's allowed to be a little extra.

And that little extra comes this year in the form of these gingerbread waffles. The addition of classic gingerbread spices gives the waffles a truly festive touch. To make them even more celebratory, a little more indulgent, and add just a bit more
yuminess — a drizzle of maple syrup butter is absolutely welcome here.

For the maple syrup butter, mix all the ingredients together and set aside.

    1. Mix the flour with the brown sugar, baking powder, gingerbread spices and salt. Set aside.

    2. Beat the eggs together with the melted butter, maple syrup and vanilla essence.

    3. Add the flour mixture and stir until you have a smooth batter. (You can also do this in a stand mixer or with a hand mixer.)

    4. Preheat the waffle iron. Using an ice cream scoop, spoon the batter into the waffle iron — one scoop per waffle. Bake until golden brown (about 3 to 4 minutes).

    5. Serve the waffles warm with the maple syrup butter.

    Enjoy!

These waffles are best served straight from the waffle iron. The maple syrup butter melts beautifully over the warm waffles and gives them a wonderful sweetness.

You can make the maple syrup butter ahead of time and keep it in the fridge. Just take it out in time so it comes back to room temperature before serving.
