Sinterklaas muffins

Breakfast muffins are very easy to make, they're healthy, convenient to take with you and endlessly adaptable. There are already countless healthy breakfasts like banana-egg pancakes, fresh oatmeal or the fantastic chia pudding. These muffins definitely deserve a place in that lineup!

With Sinterklaas back in the country, we thought it would be fun to give these muffins a Sinterklaas twist. They use speculaas spice and almonds — perfect for daydreaming about pakjesavond. Or the morning!

Sinterklaas muffins

The soft, spiced flavor immediately brings to mind pepernoten and filled speculaas, but in a light muffin that's perfect for breakfast.

  • Oven preheated to 180 °C
  • Muffin tin
  • Muffin liners
  • Food processor or blender

Ingredients

  • 125 g oats
  • 150 ml vanilla rice milk
  • 2 eggs
  • 1 banana
  • 1 tsp baking soda
  • 4 tsp speculaas spice
  • 2 handfuls blanched almonds
  • 1 tsp anise seed
  • 2 tbsp honey
  • Pinch of salt

Sinterklaas muffins

    1. Place the oats together with the eggs, banana, milk and baking soda in the blender and blend until a smooth mixture forms.
    2. Now add 1 handful of almonds, 3 tsp speculaas spice, the anise seed, salt and 1 tbsp honey. Blend again until all ingredients are well combined.
    3. Line the muffin tin with paper liners and fill the cups with the batter. This amount will fill about 10 cups. Place the tin in the oven at 180 °C for 20 minutes.
    4. Meanwhile, finely chop the remaining almonds and add the remaining speculaas spice and honey. When the muffins are done, spoon some of the almond-honey mixture on top of each.
    5. In an airtight container you can keep the muffins for about 5 days: perfect to prepare for the whole week!

These Sinterklaas muffins are delicious thanks to the combination of speculaas spice, anise seed and honey. They're gluten-free and contain no refined sugars, making them a much healthier treat than the average indulgence. Make them on Sunday and enjoy them all week long!

Store the muffins in an airtight container and they'll stay fresh for up to five days. That way you always have a tasty Sinterklaas snack on hand. Serve at room temperature or warm briefly in the oven for an extra-crispy almond-honey drizzle on top.
