Fantastic combo: Fennel salad with orange
Fresh salad with fennel, avocado and orange
Flavour combinations can be so wonderfully delicious and surprising. Cheese with a fried egg, peanut butter with chocolate sprinkles, and peach with mozzarella are combinations I simply can't get enough of whenever I put them together. Some are more obvious and easy to predict, others less so. When I come up with a less obvious combination that turns out brilliantly, I let myself enjoy that little win 😉 I thought I'd discovered something unique with the fennel-orange combo, until a chef friend told me it's actually a well-known pairing. Not so original after all 😉 but absolutely delicious!
With this recipe it's truly less is more. You really don't need many ingredients to make something that tastes fantastic. For this salad I used orange-infused olive oil that I picked up in Zakynthos. Normally I'm not a big fan of orange-flavoured products, but this oil is different. During the pressing process the oranges were crushed right along with the olives, so the flavours are genuinely woven together. Heaven on earth! I can't say for certain whether it's available in supermarkets, but I found an online shop that sells something similar. If you don't have orange olive oil, simply make your own dressing by mixing regular olive oil with a little freshly squeezed orange juice — just as easy =)
