Bold salmon burgers on Turkish bread

Picture this: you've spent a glorious day soaking up the sun at the beach, you're heading home with friends, and somewhere along the way you decide you want to eat together. Go out? Not tonight. Cook then? Sure — as long as it's not too much effort. It needs to be quick, and it needs to be really good. That's exactly the moment these salmon burgers — dreamed up by the now-legendary chef-friend Nicky) — are absolutely perfect.

I can also tell you they taste just as fantastic on a regular Tuesday evening 😉 You can use Turkish bread (as in this recipe), but Italian rolls work brilliantly too. If you'd prefer something wholegrain, go for a sturdy roll — it pairs best with the burger. Beyond that: don't overthink it and just enjoy =D

    1. Chop all the ingredients for the sauce and mix them together in a small bowl. It doesn't need to be smooth — the chunks are what give it a lovely bite.

    2. Fry the burgers on all sides until golden brown over medium heat.

    3. Cut the bread into 4 pieces and slice each piece open. Layer on a handful of rocket, then sliced avocado, then the burger on top. Finish with a generous spoonful of sauce.

    4. Serve with a wedge of lime, and dig in!

The yoghurt sauce is best left chunky: the pieces of gherkin, radish and spring onion add a wonderful bite with every mouthful. Add a little extra sea salt to taste.

You can also briefly toast the Turkish bread in a grill pan for extra crunch. Serve the burgers straight from the pan for the best result.
