Beef burgers with creamy avocado filling | Paleo recipe

Do you remember a while back, when I spent a few weeks eating according to the paleo principle? The bottom line is that you eat more protein and (good) fats, and fewer carbohydrates. A friend of mine came over for dinner who eats low carb — so very few carbs. I remembered that I'd once made incredibly tasty burgers with an avocado filling: perfect for a meal that's low in carbohydrates but still packed with good fats and protein.

I made a few more delicious things to go alongside: cauliflower mash, courgette hummus and a fresh salad. Everything tasted amazing, with the burger as the real star of the show. You definitely don't need to follow a paleo lifestyle to make these burgers — they're honestly delicious any way you serve them. Next to a salad like I did, or in a bun if you're going for carbs. You could also swap your usual piece of meat for this burger every now and then — a nice change of pace =)

Equipment

  • Frying pan
  • 2 bowls
  • optional: gloves if you (like me) don't want dirty nails when shaping the patties

Ingredients

  • 500g beef mince
  • 1 avocado
  • 1 tbsp sun-dried tomatoes (in oil)
  • Juice & zest of 1/2 lime
  • Pepper & sea salt from the mill
  • Butter (for frying)

    1. Make the avocado filling in a bowl: drain the sun-dried tomatoes and chop them into small pieces, mash the avocado and mix in the sun-dried tomatoes, lime juice and a pinch of salt. The mixture shouldn't be too chunky, but a few small pieces are fine.

    2. In the other bowl, mix the minced beef with the lime zest, pepper and salt. Knead well, then shape into nice, thin patties.

    3. Make a small indent in half of the patties, spoon some avocado mixture on top, place another patty on top and press the edges firmly together to seal. Repeat with all the meat and filling — I ended up with 4 large patties and 1 small one.

    4. Heat the butter in a frying pan and cook the burgers until nicely browned on all sides. I had some avocado mixture left over and spooned it on top of the burgers when serving. Enjoy!

These burgers are delicious on their own, but you can also serve them with a fresh green salad or grilled vegetables. Any leftover avocado mixture works perfectly as a sauce spooned right over the top.

Make sure the edges of the patties are pressed together firmly so the filling doesn't leak out during cooking. Use a ripe avocado for the creamiest filling.
