About Robert Herder

Robert Herder has been producing knives for over 150 years. They not only make their famous peeling knives, but also beautiful kitchen knives, chef's knives, slicing knives and collectible items.

The knives are made of carbon steel and stainless steel and undergo a special way of sharpening and polishing, making the knives thinner and sharper than an average knife. The knives are still handmade and assembled. Each knife undergoes 60 to 70 treatments before it is ready for use.

What does our expert say?

Trade Show Specialist
Trade Show Specialist

Robert Herder is a name that really means something in the knife world, and this product shows exactly why. I find the short 8.5 cm blade ideal for precise tasks like finely chopping herbs or preparing fruit, for those jobs you want control, not a large chef's knife. The stainless steel cuts fantastically sharp, but it does require some attention: dry it well after each use, otherwise the steel will have the chance to oxidize. That sounds like extra work, but knives you take care of deliberately simply last much longer and reward you every time at the cutting board. If you appreciate craftsmanship and aren't afraid of a bit of maintenance, you'll be buying something that gives years of pleasure.

FAQ

Can I put this molenmes in the dishwasher?
No — this molenmes is not dishwasher-safe. The blade is carbon steel, and the aggressive combination of moisture, heat and dishwasher detergent will attack the steel. You don’t want that. Always clean the knife by hand: rinse briefly with warm water and dry immediately with a clean cloth. This keeps the blade in top condition and preserves its exceptional sharpness.
How do I care for the wooden handle of this knife?
The handle of this molenmes is made of high-quality wood, and wood needs a bit of attention. Never soak the handle for a long time — that will damage the wood. • Wash the knife by hand and dry it immediately after use. • Occasionally treat the wood with a little oil (for example mineral oil or linseed oil) to keep it smooth and looking good. • Store the knife dry, preferably in a knife block or on a magnetic strip. With this care the handle will remain comfortable in the hand and keep its classic appearance.
How do I keep the carbon steel blade sharp and rust-free?
Carbon steel has a specific characteristic: it can be made sharper than stainless steel and holds that edge longer — but only if you take good care of it. • Always dry immediately after use: moisture is carbon steel's biggest enemy. • Sharpening: use a whetstone or a honing steel to maintain the blade regularly. • Storage: store the knife dry and preferably separate from other cutlery or metals. A small amount of surface rust is normal for this type of steel and can be removed with a soft scouring pad or a dedicated blade oil.
Is this molenmes also suitable for left-handed users?
The Robert Herder Molenmes has a symmetrical design with a wooden handle that sits comfortably in the hand. There is no specific ergonomic shaping for right- or left-handers, which means the knife can be used by both groups. The blade is 8.5 cm long and, because of its size, offers good control for precision cutting regardless of which hand you use.
What kitchen cutting tasks is this molenmes best suited for?
The Robert Herder Molenmes with an 8.5 cm blade is particularly suited to precision cutting. Think of: • Finely chopping herbs such as parsley, basil and chives • Peeling and cutting vegetables — the compact size gives you a lot of control • Slicing fruit such as apple, pear or citrus Because of the combination of the sharp carbon steel blade and the compact size, this knife is ideal for tasks where precision and control are important, not for heavy chopping or cutting large pieces of meat.
