Use tipo 00 flour for the most silk-smooth pasta. Plain all-purpose flour works too, but tipo 00 gives that little extra.

What do you need?

For two people you need 200 grams of tipo 00 flour and 2 large eggs. That's it. For four people just double it. Want extra yellow, rich pasta? Add an extra egg yolk per 100 grams of flour. You'll also need a clean work surface or a large bowl, a pasta machine to roll out the dough and a knife or cutting attachment to shape the pasta.

Make a mound of the flour on your work surface and create a well in the middle. Break the eggs into the well and beat them with a fork while gradually incorporating the flour from the edges. As soon as the mixture becomes too thick for the fork, start kneading with your hands. Knead the dough firmly for at least 8 to 10 minutes until it feels smooth and elastic. Is the dough too dry? Add a few drops of water. Too sticky? A little extra flour.

This is the step people often skip and that's a shame. Wrap the dough in plastic wrap or cover it with an overturned bowl and let it rest for at least 30 minutes at room temperature. During resting the gluten relaxes, making the dough much easier to roll out later and preventing it from springing back. Use that time to start your sauce or set the table.

Divide the dough into four equal pieces and keep the rest covered while you work with one piece. Flatten the piece with your hand first and feed it through the machine on the thickest setting. Fold it in half and repeat this two or three times. This gives the dough extra structure. Then go step by step to a thinner setting. For tagliatelle stop at setting 5 or 6. For lasagne sheets or ravioli go to setting 6 or 7. Lightly dust the sheets with flour so they don't stick.

Using a cutting attachment on your pasta machine? Then the machine will cut the ribbons for you. Using a knife? Roll the pasta sheets loosely, cut them into thin or wide strips and shake them out into ribbons. For ravioli lay a sheet flat, place small mounds of filling on half of the sheet, fold the other half over and press the edges well. Then cut the ravioli out with a knife or a cutter. Place the shaped pasta on a lightly floured plate or drying rack while you finish the rest.

Cooking

Bring a large pot with plenty of water to a boil and add a good amount of salt. Fresh pasta needs much less cooking time than dried pasta. Tagliatelle is ready in 2 to 3 minutes. Ravioli takes a little longer, about 3 to 4 minutes. Just taste after a few minutes to see if it's cooked to your liking. Drain the pasta and combine it immediately with your sauce. Fresh pasta absorbs sauce quickly, so add some pasta water if the dish becomes too dry.

Serve the pasta on wide, deep pasta plates so there's enough room for the sauce and any finishing touches. A handful of Parmesan, some fresh basil or a drizzle of good olive oil completes the dish.
