Whiskey Sour with Fresh Lemon and Foamy Egg Whites

Some cocktails you try once, and some you keep coming back to. The Whiskey Sour belongs firmly in the second category. Fresh lemon juice cuts right through the richness of the whiskey, simple syrup brings balance, and whipped egg white creates that silky-smooth foam collar on top. The result: a drink that looks beautiful and tastes just as good to the very last sip.

Serve your Whiskey Sour in a good whiskey glass so the aromas have the room they deserve. Want to experiment with a longer, icier version? tumbler glasses work beautifully too, with extra ice and a lemon slice on the rim. But the classic version starts with a good whiskey glass — clear, solid in the hand, and a pleasure to drink from.

This recipe serves 2 and is ready in under 10 minutes. You don't need any professional bar equipment — just a cocktail shaker or a sealed jar you can shake firmly. That's all.

Equipment

  • Cocktail shaker or sealed jar
  • Strainer or cocktail strainer
  • Citrus juicer
  • Measuring cup or jigger
  • Whiskey glasses

Ingredients

  • 90 ml whiskey (bourbon works beautifully, but Irish whiskey is just as welcome)
  • 60 ml freshly squeezed lemon juice (approximately 2 lemons)
  • 30 ml simple syrup (see step 1)
  • 1 egg white (from a fresh egg, at room temperature)
  • Ice cubes (plenty)
  • 2 lemon slices (for garnish)
  • A few drops of Angostura bitters (optional)

How do you make a Whiskey Sour with fresh lemon juice and egg white?

    1. Start by making the simple syrup if you don't have any: dissolve 100 g of sugar in 100 ml of warm water, stir until clear and leave to cool. This takes 5 minutes, and you can store any leftover syrup in the fridge.
    2. Juice the lemons and strain the juice. You need around 30 ml per person, so roughly 60 ml in total for 2 glasses.
    3. Add to a cocktail shaker: 90 ml whiskey, 60 ml fresh lemon juice, 30 ml simple syrup and the white of 1 egg. Close the shaker and shake vigorously without ice. Bartenders call this a 'dry shake', and it's what gives you that firm, stable foam.
    4. Add a generous handful of ice cubes to the shaker and shake again, this time for 15 to 20 seconds, until the mixture is thoroughly chilled.
    5. Strain the cocktail through a strainer into two whiskey glasses with a few large ice cubes. Pour slowly so the foam stays floating on top.
    6. Garnish each glass with a lemon slice on the rim and, if you like, a few drops of Angostura bitters on top of the foam. The bitters are optional, but they give the glass a lovely nose and add subtle depth to the flavour.
    7. Serve immediately and enjoy. A Whiskey Sour waits for no one.

A great Whiskey Sour unfolds in layers. First the citrus, then the whiskey, and finally the sweet finish. That's also exactly why the glass matters. Drink this from a thick, dull glass and you miss part of the experience. From a clear, well-shaped whiskey glass, everything comes together: the aroma, the colour and the taste. Quality doesn't have to be complicated. Sometimes it's just a good recipe and the right glass.

Want to mix things up? Swap the bourbon for a smoky Scotch for a more earthy character, or go for rye whiskey if you prefer a bit more bite. You can also infuse the simple syrup with rosemary or thyme for a more culinary twist. This is a base recipe that lends itself perfectly to experimentation. Try it once, then change exactly what you want. That's how you turn a classic into your classic.
