And a vegetarian quiche is always a winner. If you do have serious meat-eaters at home, you can always add some bacon bits or cubes of salami. But without meat it might even be tastier!

Vegetarian quiche with broccoli

The vegetarian quiche with broccoli is an easy and tasty dish filled with broccoli, cherry tomatoes, red onion and mozzarella. The filling is seasoned with thyme, oregano, eggs and crème fraîche, and baked in a pastry base until golden. Perfect as a main course for four people or as a make-ahead meal to reheat later, this quiche is delicious both warm and cold.

Ingredients

  • Savory tart pastry or 8 sheets of puff pastry
  • 1 head of broccoli
  • 200 g cherry tomatoes
  • ½ red onion
  • 1 ball of mozzarella
  • 5 eggs
  • 200 g crème fraîche
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • salt and pepper to taste

How to make a vegetarian quiche with broccoli?

    1. Preheat the oven to 200°C.
    2. Cut the broccoli into florets. Bring a pot of water to the boil and cook the broccoli for about 7 minutes.
    3. Take a baking tin of about 24 cm and grease it. Line the tin with the savory tart pastry or the sheets of puff pastry. Prick holes in the base with a fork.
    4. Halve the cherry tomatoes and cut the red onion into half rings. Place the cooked broccoli in the base of the tin together with the cherry tomatoes and red onion. Sprinkle the thyme and oregano over the vegetables and season with salt and pepper.
    5. Beat four eggs in a bowl and mix with the crème fraîche, salt and pepper. Pour the egg mixture over the vegetables.
    6. From the fifth egg, use only the yolk to brush the pastry. This will make it nice and golden in the oven.
    7. Tear the mozzarella into pieces and scatter over the tart.
    8. Place the tart in the oven and bake for about 40 minutes at 200°C. Is the filling still wet afterwards? Put it back in the oven for another 10 minutes. If the quiche is getting too brown, cover it with aluminum foil.
